Kangkong is known as river spinach and is a popular vegetable in the Philippines. My dad grew kangkong his garden while I was growing up and I remember my grandma used to pickle the kangkong stalks (next on my agenda. haha.). It was so good! For this dish, I made a vegan adobo kangkong, which is usually cooked with minced pork. You can basically adobo anything. Happy eating!
